Butternut Squash Curry

Ingredients
  • 200g Brown Basmati Rice
  • 400g Chickpeas
  • 3 tbsp Fat Free Yohurt
  • 300ml Vegetable Stock
  • 1 Red Onion (Diced)
  • 2 tbsp Mild Curry Paste
  • 4 Tomatoes (Chopped)
  • Handful Coriander (Chopped)
  • 1 Butternut (Diced)
  • Procedure
    1. First, cook the rice in salted biling water.
    2. In a frying pan heat 1 tbsp od olive oil and put the butternut squash. Cook until it gets lightly browned
    3. Then, add the onion and curry past. Fry for 4-5 minutes
    4. Pour the vegetable stock into the mixture, cover and simmer for 18-20 minutes.
    5. When the squash is tender, add tomatoes and chickpeas. Cook until the tomatoes softens or 4-5 minutes.
    6. Turn off the heat, put the yogurt and coriander, stir throughly.
    7. Now service the healthy curry with rice. Happy Cooking!
